Wood Cake Dowels Video Part 2 Stacked Cake Assembly

Horizontal Support Dowel Orientation

Although these long pointed dowels are oriented vertically, they are referred to as horizontal supports because they help prevent cake tiers from sliding side to side. Note that these dowels do not need to nest within the same plane as shown in the picture below. Insert them on different axes so there is no risk that they will get in the way of each other.

How to Stack a Cake Tier

Use a small offset spatula plus the palm of your opposite hand to lift and maneuver cake tiers.

Hover it over the spot where you intend to set it down. Slowly and gently lower the far corner of the cake tier down.

Once the far corner has made contact, wiggle the cake until it is centered to your satisfaction. Then, remove your hand, being careful not to bump your knuckles on the tier below.

Once your opposite hand is out of the way, lower the spatula, setting the cake tier down.

While the spatula is still underneath the cake, check one last time to make sure the tier is centered where you want it to be. This is your last chance to easily adjust it’s positioning.

If you are satisfied with the position of the tier, slide the spatula out from underneath it. Hold the blade level as you pull so it doesn’t scrape against the cake’s finish.

Inserting Pointed Horizontal Support Dowels

Push long pointed support dowels pointy-side-down into the top of the tier to join it to the tier below. Tap with a hammer to help it pass through the cake cardboard.

This cake was decorated with a cutout rolled modeling chocolate peacock pattern.

Hello, I would love to see a tutorial on how to stack very tall cakes up to 10 or 12 + tiers.

How do you do well them. How to transport it and how to assemble it. I would love to purchase this tutorial if you made it using real cake.
