5. Level off the top lip using a medium-sized offset spatulaHold the blade at an angle so that only the back edge of it makes contact with the frosting. If you press straight down with the entire flat surface of the blade, you will only push the frosting around. Between each swipe of the offset spatula, clean the blade off on the edge of a bowl. Remember that the cake does not need to look absolutely perfect at this stage so don’t waste your time trying to fix imperfections, especially around the edge. You can make all your fixes later, once the cake is cold.

6. Return the cake to the refrigerator for at least one hour to chill.
