    And do you want to take on an apprentice?! I would give anything to learn the trade from someone like you! I’m not useless. I have made a few decent things. Mostly cookies.

      Oh my gosh! Your breakfast themed cookies are darling. Thank you for sharing such a lovely photo of your work! Clearly you have skill.

      I’m from Massachusetts originally but I’m currently based in California so if you are in Mass, that would be a wicked long commute! Also, I’ve retired from the baking trade and now work in publishing how-to books so there’s not much to see around here most of the time except me clacking away on a keyboard.

I hope you’ll stick around and continue to share feedback and photos of your work. I live for that kind of stuff, especially since retiring from commercial baking. Now I get my thrills vicariously through those of you who are still actively baking. I’m here rooting you on.

  2. Is it natural for the modeling chocolate flowers to get soft when they are on the cupcake? I put some on cupcakes and placed them in a box for travel and the leaves and flowers begain to get soft. Helpn

    • Nancy,
      Did you put them in the refrigerator? When modeling chocolate is exposed to prolonged moisture, this can happen. Also, what kind of frosting was on the cupcakes? If it was whipped cream frosting, that could also impart a good amount of moisture. It’s the one finish that I don’t recommend using in contact with modeling chocolate. Was it warm in your car that day? How big were the flowers?

      Please share some more details with me so I can help you figure it out. If you can attach a photo, that would help too.

    • Thanks for responding to My message I appreciate it. The icing was a buttercream icing using high ratio vegetable shortening I had put them in a cupcake carrier with the lid on. When I check them in the morning and took the lid off the flowers were a little oily I removed the lid and left it off until my husband was ready to go. I than put the lid on and sent him to work with the cupcakes. I have enclosed a photo. Any help would be appreciated.

      • Nancy,
        The sponge of the cupcakes are loaded with moisture. If there milk or cream in the frosting, that is another source of moisture. Enclosing modeling chocolate decorations in a sealed container with that kind of moisture is what would cause this issue. It looks like those flowers held their shape though. I bet nobody even noticed the problem but you. Next time, just wait to add the modeling chocolate decorations until the last possible minute. Great job on the cupcakes by the way! They look nice.

    Just wondering if you temper the chocolate that you use for writing and piping garnishes. If not, isn’t there the possibility that they would melt at room temperature??? And on the other hand how do you keep the melted choc from setting up while you’re working?

  4. Hello! Just bought your book! Love it! Just have a couple of questions…. Can you paint on modeling chocolate like you can on fondant? The other question is what is the best way to store acakes covered with modeling chocolate or decoration. Do you store them in the fridge??? I could not find the answers to these questions in your book. Hope you can help me with this…..

    • Yes you can paint on it but it’s much harder. Color doesn’t stick as easily to modeling chocolate as it does to fondant because modeling chocolate is slicker.

      Also, yes, always store cakes in the fridge. If you want to prevent condensation from forming on the surface, seal the cake in plastic wrap.

  5. Purchasing your book opened a whole new wonderful world in decorating. Everyone I who has received cakes and cupcakes with modeling chocolate decorations has been very happy, as the mc tastes fabulous. I had struggled with many batches of homemade, and can’t afford to mail order commercial, so having your book was a great find for me. Thank you for your inspiration and instruction.

    • So glad you like my book! I don’t have a tutorial for the letterman’s jacket but I can tell you that it is not hard to make using one rectangular chunk of cake and another piece that was cut the long way to make the two arms. The trick is to drape the modeling chocolate loosely over the cake so that it looks like leather. The cuffs of the jacket can be embossed to look more realistic.
